Most organizations cannot afford to make the investment necessary to bring the booths up to current standards. The County can make the initial investment, then increase revenue from the improved booths through an increase in commissions. My suggested policy change is this: The Grant County Fairgrounds currently charges 15% commission for food booth sales by non -profits and 20% commission for food booth sales by for -profit booths. If the Fairgrounds invests in equipment and the building to bring it up to current health and safety standards then the cornmission shall raise to 20% for non -profits and 25% for profit concessionaires. This creates an equipment lease between the County and the Concessionaire. The County would then be responsible for maintaining the purchased equipment and replacing it if needed.
